Mushroom Soup

Description

Simple. And I mean simple. I mean easy. I mean quick and I mean restaurant-level delicious!


Ingredients

Scale

1 pound mushrooms

1 onion

2 cups water

2 cups vegetable broth

1 tablespoon oil of your choice

3/4 cup half and half (or milk)

1 tablespoon oregano

1 table spoon parsely

1/2 teaspoon black pepper

salt to taste


Instructions

Wash and dry the mushrooms. Either chop the onions by hand or chop on 3 maybe 4 pulses in the food processor. I actually use my Vitamix and pulse maybe once…

Saute the mushrooms with the chopped onions for 5 minutes or until the onions wilt. You can add the seasoning now or later. It is up to you!

Add all liquids. You can also add the seasoning now if you have not already. Set to high and lower to medium when it boils. Set a timer to 20 minutes and add half and half to the pot. Continue to simmer for an additional 5-10 minutes.

AND this is how I imagine the restaurants MUST make this exquisite soup. It is phenomenal!

Notes

Broth- I personally use vegetable broth but I am sure another broth will do just fine. If you use a different broth, let us know how it works out!
