Description
I came across this soup which I actually found in Simply Recipes. Easy to make and now a house favorite! Nothing can be healthier. Onions, Ginger, and Carrots are the main players here.
Ingredients

- 3 tablespoons butter
- 1 1/2 pounds carrots (6–7 large carrots), peeled and sliced thin
- 2 cups chopped white or yellow onion
- Salt
- 1/4 tsp pepper
- 1 teaspoon dried parsely OR 1 table spoon fresh parsely
- 1 tablespoon minced ginger
- 2 cups chicken stock or vegetable stock
- 2 cups water
- 3 large strips of zest from an orange
- Chopped chives, parsley, dill or fennel for garnish
Instructions
Sautee the onions and carrots together on the oil of your choice.
Add stock and water, ginger, and strips of orange zest:
Bring to a simmer, cover, and cook until the carrots soften, about 20 minutes.
Do NOT forget to remove the zest! While sauteeing is very important, forgetting it creates a bitter taste in the soup…
Now, Puree and DONE.
Notes
Dried vs Fresh parsley: If you are using parsley, use the dried parsley at the beginning and if you are using fresh parsley, add the fresh parsley at the end of the preparation of your dish.

This was sooo good! I didn’t have any orange zest and I cooked half a cup of parsley with the carrots and puréed everything. Very delicious!
