One Pot Chicken Kabsa

Description
Simple seasoned tomato rice with chicken, and a side of the traditional Dakkous Sauce.
Ingredients
Scale
- 2 lbs of boneless chicken cut into medium-sized cubes ( I mix breast and thigh meat),
- 2 cups of basmati rice, washed, soaked for at least 30 minutes, and rinsed,
- 2 cups of water,
- 2 Tbsp cooking oil + 1 Tbsp of ghee ( ghee is optional but adds amazing taste to Kabsa),
- 3 cups of Basmati long grain rice,
- 1 medium -big finely chopped tomatoes,
- 1 Green bell pepper- chopped or sliced
- 1 medium- big finely chopped onions,
- 2 Tbsp of tomato paste,
- 1 small lemon juice,
- 1 tsp of garlic ginger paste,
- 1 tbsp mixed Kabsa spices
- 1 tsp allspice
- 1 cinnamon stick,
- 2 bay leaves,
- 4 cardamons,
- 2 dry lemons (Lumi) pierced,
- 2 cubes or 1 Tbsp of veggie stock ( optional),
- salt & pepper to taste.
For the Dakkous Sauce:
- 2 large chopped tomatoes
- 1 small green chili pepper, halved and seeded
- 1 Tbsp of tomato paste
- 1 bunch of choped cilantro
- 4 cloves of garlic
- 1 Tbsp of white vinegar
- 2 Tbsp of olive oil.
- 1/2 Tsp salt
Instructions
- In a non-stick pot, and on medium heat add the oil +ghee and fry the onions until translucent,
- Add the chicken and fry, make sure it is sealed from all sides,
- Add the cinnamon stick, bay leaves, cardamons, and the garlic ginger paste, fry with the chicken and onions until you smell the aroma of the spices,
- Add the chopped tomatoes and let it saute with the chicken,
- Add the tomato paste, Kabsa spices, dry lemon, and fry,
- Add 4 cups of water, cover, and let it boil for at least 30 minutes,
- Add the lemon juice, veggie stock, salt, pepper, and the 3 cups of rice,
- Make sure the water is 1 cm (1/2 inch )above the rice level, if not, add water to reach the suggested level,
- Cover the pot and let it cook on low heat for another 30-40 minutes or until the rice absorbs all the liquid and fluffs up.
- Serve with fried nuts on the top and with yogurt and Dakkous Sauce on the side
for the Dakkous Sauce:
- blend everything together in the blender, transfer to a small pot and let it boil on very low heat for no more than 2- 3 minutes.

Notes
Instant Pot Method: Add all the spices with the chicken, tomato, water, etc. Place on beef stew and time it to 20 minutes. Once finished, add the rice and set for another 12 minutes on Rice. See here for the Instant Pot method—–> Kabsa Instant Pot
