Baba Ghanoush (Eggplant dip)
The first time I hosted a dinner for work colleagues, I was a little nervous. So many different dietary restrictions to consider. We have vegetarians, vegans, and someone with Celiac disease and is strictly gluten-free. I stuck with Middle-Eastern foods and it was a hit! There was something for everyone. This baba ghanoush dish is something that is not regularly found in my small town grocery store, and so many people enjoyed trying it!

Description
Baba Ghounoush is a traditional mezza type dip. It is a great addition to a big mezza type dinner, or when you have leftovers for the next day, but not enough to fill everyone up.
Ingredients

- 1 small jar of eggplant.
- 1/4 cup lemon juice
- 4–5 tablespoons tahini (store-bought or homemade)
- 2 cloves garlic, minced
- 1.5 teaspoons salt
- Pita bread
Instructions
- Put all ingredients together in a bowl and mash together. Alternatively, you could put it in a blender and pulse lightly. It should have a chunky consistency.
- Spoon into pita bread and eat as a sandwich, or use the bread as a dip.
