(Air) Fried Veggies – Arabic Mezza
This is one of our favorite weekend dinners. Traditionally, we deep fry eggplants, potatoes, and cauliflower. However, we have adapted this to make it healthier and easier to clean up! It takes a little time to get the veggies perfectly crispy, which is why we save this for a weekend, but clean up is so easy and you don’t really have to watch it. Just chop and place in the air-fryer. Shake it up mid-way, and you’ll have a very satisfying, vegan dinner. We like to top ours with mild salsa and extra lemon juice.

Description
Air-fried eggplant and cauliflower on tortillas, topped with mild salsa and lemon juice.
Ingredients

- 1 medium eggplant (sliced 1/4 inch thick, long way)
- 1 bag frozen cauliflower
- 1 tablespoon olive oil
- salt and pepper, to taste
- 9 tablespoons lemon juice
- 1 bag of white flour tortillas
Instructions
- Place sliced eggplant and cauliflower in the air fryer evenly. Sprinkle with salt, pepper, and olive oil.
- Turn the air fryer on 400 degrees for 20 minutes, shaking it up in the middle.
- Once it’s finished, top it with additional salt and pepper if needed and lemon juice, to taste.
- place on the tortilla, top with salsa, and enjoy!
