Easy Slow Cooker Sabanikh (Spinach Stew)
Fun story: My Sister-in-law has a clinic for alternative remedies. She is in the medical field and only has equipment that has been proven to work. The other day, someone was coming in to show them new equipment that tests your health and whether you are deprived of nutrients. She was the ONLY one who passed with flying colors. She said it was because of her Middle-Eastern diet. She is the one who told me to use frozen spinach instead of fresh and I have not gone back ever since! The clean-up is so easy! And everything is always available to cook so I never have to make any last-minute trips to the grocery store.

Sabanikh (Spinach Stew)

Description
Spinach, hummus, and ground beef stewing slowly together. Vegan? This can easily be converted into a perfectly balanced vegan meal by replacing the ground beef with two cans of chickpeas (so three cans of chickpeas total). Delicious and so, so nutritious!
Ingredients
- 2 packages frozen spinach
- 1 lb ground beef
- 1 onion, diced
- 1 can chick peas, drained and rinsed
- 1 tspn salt
- 1/2 tspn black pepper
- 10 cloves garlic
- 1 tspn ground coriander
- lemon wedges for serving
Instructions
- brown the beef and onion together. Do not overcook.
- add to slow cooker, along with all other ingredients (except for lemon wedges).
- cook on low for 8 hours or high for 4 hours.
